Italian Tortellini Soup
Spawn LOVES this... I can not make enough!
Ingredients
1 lb mild Italian Sausage, Casing removed
1 c onion, chopped
2 lg cloves garlic chopped
6 cups beef stock
16 oz can of drained and chopped tomatoes
8 oz can of tomato sauce
1 lg zucchini sliced
1 lg carrot, sliced
1 med green pepper diced
1/2 cup dry red wine
1 t dried basil
2 t oregano
8 oz cheese tortellini
Parmesan cheese
Brown sausage nad remove from skillet. DRain drippings (i don't) Add onion and garlic. Saute five minutes. Combind meat, onion and garlic beef stock, zucchini, carrot, green pepper, wine and spices in a large pot. Simmer about 30 minutes or so. Add tortellini. Cook until tender. Serve with cheese.
