Avocado Pesto

Avocado Pesto
Prep Time: 5 mins Yield: 1 cup
Ingredients
1 large avocado, pitted and scooped out
1 handful basil leaves, about 1/2 cup
1/4 cup chopped cashews
2 cloves garlic, minced
Juice of 1 lime
1/4 teaspoon salt
1/4 cup + 1 tablespoons olive oil or water
Instructions
Add all ingredients into a food processor and blend until creamy.
Use immediately but you can also store it in the refrigerator with plastic wrap pressed against the top to stop from browning.
