Caramelized Brussels Sprouts with Prosciutto
start-to-finish: 20 mins Servings: 6

Ingredients

4 tablespoons olive oil
4 cups trimmed and halved Brussels sprouts
Salt and black pepper
2 tablespoons water
1 thin slice prosciutto, chopped
1 tablespoon lemon juice

Directions

Step 1 - In a 12-inch nonstick skillet heat 3 Tbsp. of the oil over medium heat. Arrange Brussels sprouts, cut sides down, in a single layer in skillet. Drizzle with remaining 1 Tbsp. oil and sprinkle with salt and pepper.

Step 2 - Cook, covered, 3 minutes. Sprinkle with the water. Cook, covered, 2 minutes or just until sprouts begin to caramelize and are nearly tender.

Step 3 - Increase heat slightly. Add prosciutto. Cook, uncovered, 1 to 2 minutes more or until sprouts are well-caramelized. Remove from heat. Drizzle with lemon juice; toss to coat.

Garnishes

If desired, top with toasted pine nuts or coarsely chopped hazelnuts, or grated Parmesan cheese.
