Tuna Salad

This is my favorite tuna salad recipe. It is perfect with lettuce and crackers.

Tuna Salad

1 (6 ½ oz.) can white tuna
2 hard boiled eggs, chopped
dash of black pepper
2 sweet pickles, chopped
¾ c. chopped celery or sprinkle with celery seed
¼ t. salt
2 T. lemon juice
Mayonnaise


Combine ingredients and moisten with mayonnaise. Chill and serve on crisp lettuce. Delicious served with crackers.

This is one of my recipes from my cooking column I write for the local newspaper:



Not Mexican Chicken
1-1/2 pounds ground beef
1 can Ro-Tel
1 can of Cream of Onion soup
1 can of Cream of Mushroom soup
2 cups shredded cheddar cheese or cheddar and Monterey jack cheese blend
13-ounce bag of nacho flavored tortilla chips (Doritos) crushed coarsely (not fine)

Preheat oven to 350. Using a large skillet brown the ground beef, you may wish to flavor the meat as you brown it with a dash of salt and pepper or even season salt. Once the meat is browned, drain off the fat. Turn off the heat to the skillet. Mix in the can of undrained Ro-Tel and the two cream soups until well blended. Crush half a bag of chips and cover the bottom of a 13x9 baking pan with crushed chips. Pour your meat mixture over it evenly, spread out until flat. Top with cheese. Place in the oven for 30 minutes or until cheese is melted and bubbly.

I just joined up.... and was wondering if anyone i interested in diabetic or low carb recipes. My mom is a Type 2 Diabetic and I might as well be. (I have PCOS and don't handle starches well!) I don't stint on flavor, so what I would post would be tried and Young Adult Man tested!!!!!

Although, sometimes, I think what I cook is wasted as he's too busy throwing straight to his stomach, it doesn't touch the tastebuds...

Hi all! Here is my first contribution. I created this one just after I got married...a long time ago. Tt is very health friendly and a big fave of my hubby and the kids. It is really easy, too!

4 skinless/boneless chix breast (or 1 per person)...pounded
1 sm. bottle zesty fat-free Italian dressing
1 zucchini slices very thin
1 tomato sliced thin
thin sliced provolone (1 to 1 1/2 slices per breast)

To prepare:
*Pound chicken flat (makes for faster and more even broiling) and place in a lg. zip lock bag.
*Add the small bottle (about 2 cups) Italian dressing and marinate at least 1 hour.
*Remove chicken and discard the dressing.
*Place chicken on broiler pan and broil, turning once.
*Once you turn it over and it is almost done cooking, top with a couple of zucchini slices (see hint), 1-2 tomato slices and cheese.
*Finish broiling (let the cheese begin to bubble and brown).

Hint: I micro the zucchini for about 2 minutes to pre-cook a bit before topping the chicken with it.

I usually serve it with rice for the rest of the family...I like it with a bit of wild rice since I started on the South Beach Diet.

This is one of my favourite recipes - it's wonderfully easy and has pineapple in it!


Hawaiian Toast

Ingrediants:
Sandwich Toast - as many slices as you would like
Ham
Pineapple rings - out of a can is fine (unsweetened), pineapple rings look best! :)
Cheese - I like Gouda best, but American or all other cheeses that melt well are fine


This is how you do it:
1. Take a slice of toast
2. Put a slice of ham on it
3. Put a ring of pineapple on it
4. Cover it with a slice of cheese
5. Put it in the oven (middlish temperature, about 180°C) and wait until the cheese it melted
6. Enjoy! :)

It's so easy and quick, it almost does not deserve to be called "cooking", but for a quick meal at night, it's wonderful. It's a favourite among German students, but kids and adults tend to like it too! :)
