Ginger Pork in Orange Sauce

I t ground ginger
1/2 t garlic powder
1/4 t pepper
1/2 lb lean pork boneless lin cut into cubes
3/4 oragne juice
1 T packed bronw sugar (again, I use the splenda mix)
1/2 t grated orange peel
1 1/2 cup sliced fresh mushrooms (4 oz)
3/4 uncooked couscous or rice
1 med orange, peeled, section
1. In plastic food starage bag, mix ginger, garlic powder, and pepper. Add pork to bag. Shake bag to coat pork with seasonings.
2. Heat 10 inch skillit (non stick) over med high hieat. Cook pork in skillet 2 to 3 minutes stirring frequently until brown. Stir in orange juice, brown sugar. oragne peel, and mushrooms. Reduce heat ot low. Cover and cook about 15 minutes or until pork is tender.
3. Meanwhile, cook couscous as directed on package. Stir orange sections into pork mixture. SErve over couscous
Again - this is only 2 servings. I double it so I have enough for lunch the next day and enough for Spawn, the Bottomless pit to eat.
