Banana Nut Bread in a Jar
This makes 8 pint wide mouth jars. You need the lids and rings also.
2 2/3 c. sugar
2/3 c. shortening
4 eggs
2/3 c. buttermilk
2 c. ripe bananas mashed
1 tsp. vanilla
3 1/2 c. all purpose flour
1/2 tsp. nutmeg
1 tsp. cinnimon
2 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
2/3 cup chopped nuts (optional)
Preheat oven to 325
Mix sugar and shortening with mixer. Add eggs, mix well. Add buttermilk and vanilla, mix well.
In a separate bowl mix all dry ingredients and then gradually mix with wet batter. Stir in bananas and nuts.
Grease jars and pour one cup of batter in the jars. Place jars on a cookie sheet and bake for 45 minutes. You can check for doneness with a toothpick. Carefully remove jars and immediately put lids and rings on teh jars. The jars will seal themselves.
I used the shortening to grease the jars and the bread literally slid out. : )
