Crustless Potato Quiche
5 beaten eggs
12 oz. Pkg. Frozen hash browns
1 cup shredded Monterey Jack cheese
1 green onion, chopped
1/2 cup cottage cheese
1/4 tsp. Salt
1/8 tsp. Pepper
Dash of hot sauce
Paprika
6 slices bacon, cooked and crumbled
Combine first 8 ingredients, stir well. Pour into lightly greased 9-inch pie plate. Sprinkle top with paprika. Bake at 350 for 25 minutes or until set. Sprinkle bacon evenly on top. Bake 5 minutes more.
