Peruvian Quinoa and Vegetable Salad

Ingredients

1 cup quinoa
1 teaspoon oil
1/4 teaspoon salt
1 1/2 cups boiling water
1/4 cup vegetable oil
3 tablespoons fresh lime or lemon juice
1/4 teaspoon salt
1 tablespoon vegetable oil
1/2 cup finely chopped onions
2 garlic cloves, minced or pressed
1 cup seeded and diced red, yellow, or orange bell peppers
1 cup diced zucchini
1/4 teaspoon salt
1 cup frozen or fresh corn kernels
2 teaspoons ground coriander seeds
2 teaspoons ground cumin seeds
1/2 teaspoon red pepper flakes (optional)
1 cup finely chopped fresh tomatoes
one 15-ounce can black beans, rinsed and drained (about 1 1/2, cups)
1/3 cup chopped fresh cilantro
