Cranberry Fudge Layer Cake

Ingredients

2 1/2 cups + 1 tbsp (333g) all-purpose flour
2 tbsp cornstarch
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup (112g) unsalted butter, room temperature
2 cups (414g) sugar
1/2 cup vegetable oil
1 tbsp vanilla extract
4 large eggs
1 cup (240ml) milk
1/4 cup (58g) sour cream
2 3/4 cups (272g) fresh cranberries
Frosting
1 1/2 cups salted butter, room temperature
1 1/2 cups shortening
12 cups (1380g) powdered sugar
6-8 tbsp water or milk
1/2 cup + 2 tbsp natural unsweetened cocoa powder
2 tsp vanilla extract
Chocolate Ganache
6 oz (1 cup | 169g) semi-sweet chocolate chips
1/2 cup heavy whipping cream
Fresh cranberries, optional
Mini chocolate chips, optional
