Slow Cooker Country Captain
Time: 3 hours 50 minutes Yield: 8 servings

Ingredients

1 large onion, chopped
1 medium sweet red pepper, chopped
2 teaspoons garlic, minced
3 pounds chicken thighs, boneless and skinless
1 tablespoon curry powder
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1 teaspoon dried thyme
1 tablespoon packed brown sugar
1/2 cup chicken broth
1/2 cup golden raisins
1 (14.5-ounce) can diced tomatoes, undrained
rice, optional, cooked, hot, for serving
parsley, optional, chopped, for garnish

Directions

Step 1 - Place the onion, pepper, and garlic in a 6-quart slow cooker.
Step 2 - Place the chicken pieces over the vegetables.
Step 3 - Whisk the curry powder, cinnamon, ginger, thyme, brown sugar, and chicken broth together.
Step 4 - Pour the broth mixture over the chicken.
Step 5 - Cover and cook on high for 1 hour.
Step 6 - Add the raisins and tomatoes.
Step 7 - Reduce the heat to low and cook until the chicken reaches 165 degrees F when tested with a meat thermometer, about 2.5 hours.
Step 8 - Serve over the rice and garnish with parsley.
