Banana Foster Pie
Sauce:
1 1/2 cups caramel ice cream topping
1 tablespoon dark rum or 1 teaspoon rum extract
1/4 teaspoon ground cinnamon
1/4 teaspoon ground ginger

2 vanilla wafer pie crusts either homemade or store bought

Filling:
4 medium bananas sliced (not too ripe you want them to be somewhat firm but not green either) (NOTE: remember to wash the skin of the bananas well before slicing after all these food scares even things you peel should be washed well before peeling, seems silly I know but you can't be too safe these days)
2 1/2 cups cold milk
1 box 4 serving size banana cream instant pudding and pie filling mix
1 box 4 serving size plain cheesecake flavor pudding and pie filling mix
2 cups whipped topping (thawed)
About 10 to 12 crushed vanilla wafers

In a small bowl, mix all sauce ingredients until well blended; set aside. Make or open pie crusts. In a shallow bowl or even plate coat the banana slices in 1/2 cup of the caramel sauce. Layer the bananas in the bottom of the pie shells. In a large bowl, beat milk and pudding mixes with a wire whisk or fork for about 2 minutes or until thickened. Fold in the 2 cups of whipped topping. Spread evenly over bananas. Refrigerate for 2 to 4 hours. Top pie with a ring of crushed vanilla wafers and top each individual slice with more of the sauce and more banana slices if desired.
Note: If you really love vanilla wafers you can put in a layer of pudding over the bananas and then a layer of vanilla wafers and then top with another layer of the pudding mix.
