Makes 3 cups
1 large peach, cored and chopped
2 bell peppers (any color), cored and chopped
1 jalapeno pepper, chopped
1 clove garlic, minced
¼ cup chopped fresh mint
¼ cup chopped fresh cilantro
2 tablespoons cider vinegar
1 tablespoon lime juice
Salt and ground black pepper
In a medium bowl, toss together the apples, peppers, jalapeno, garlic, mint, cilantro, vinegar and lime juice. Season with salt and pepper
