Authentic Greek Salad

Tomatoes, cut in wedges
Cucumbers, sliced
Red onion, cut in wedges
Brine cured Ripe olives
Feta cheese, sliced
Oregano ( optional )
Olive Oil

Put veggies in a bowl with olives on top. Top with feta cheese, oregano and drizzle olive oil over the top. This is a Greek Salad as served in Athens when Larry lived there.

I ate this daily when I travelled around the Greek mainland and islands - I was much younger and it was before the tourist boom. Such a simple dish and so yummy.

Sometimes wedges of lemon were served on the side and sometimes they left out the olives, but it was always good. I am off to make it now because you have made me feel incredibly nostalgic lol
