i made this over the weekend for the family. Mom is a Type 2 Diabetic and her sugar stayed PERFECT! I served this with steamed corn on the cob and steamed carrots baked with Splenda Brown Sugar, honey and butter substitute Also, I don't measure spices. I just shake until it smells right. I also don't weigh chicken breasts. I just bought a 2 or 3 pound package of chicken breasts.
Ingredients:
1 - 16 oz can of sliced peaches in light syrup (I used the can sweetened with Splenda
1/4 cup low sugar orange marmalade
1/4 t salt
1/4 t ground nutmeg
1/4 t ground ginger
1/8 t pepper
Veggie cooking Spray
6 (4 ounce) skinless boneless chicken breasts halves.
1 t corntarch
2 T water
Drain peaches, eserving the syrup. st peaches aside. combine syrup, marmalade nad next 4 ingredients
Place a large non stick skillet coated with cooking spray over meium high heat until hot. Add chicken and cook 5 minutes or until browned on both sides, turning once. Add peaches and marmalade misture to chicken; bring to a boil. Cover and cook 10 minutes or until chicken is done. Remove chicken from pan and keep warm.
combine cornstarch and water. Add to peach misture. Bring to a boil, cook, stirring constatnly until sauce thickens. Sppon sauce evenly over chicken.
Yeild 6 servings
