Easy Vichyssoise

Hello all! I hope you're having a fantastic weekend! Here is one of my new favorite recipes. Vichyssoise. I have to admit that for many years I was scared to even look at this recipe because the name scared me away. I thought it would be some complicated shellfish stew with a list of ingredients that was too big to fit on a roll of paper towels. I was sooooo wrong. This soup is easy to make and tastes incredibly good. The kids loved it and fought over the last bowl. This recipe is from the deep south so there's no skimpin' on calories or taste.
Vichyssoise
1 tbl. spoon bacon grease, lard, or butter (I use lard.)
3 cups leeks, white and light green parts (about 6-7 medium)
1/2 cup onion, diced
1 tsp. garlic, minced
2 tsp. salt
5 cups potatoes, peeled and diced
2 cans Campell's chicken broth
2 soup cans water
1 bay leaf (Use 2 if they're old.)
1 cup heavy cream
1/2 cup sour cream
1 egg yolk
1/2 tsp. pepper
1. Rinse leeks and discard dark green parts. Cut into 1/4" slices and then cut each slice in half. Rinse thoroughly.
2. Melt bacon grease in a stock pot and add leeks, onion, garlic, and salt. Saute until soft.
3. Add potatoes, chicken broth, water, and bay leaf. Cover pot and cook until potatoes are soft.
4. Allow soup to cool, remove bay leaf, and blend until smooth. I use the hand mixer but a blender works nicely too.
5. In a small bowl combine heavy cream, sour cream, egg yolk and whisk until smooth.
6. Reheat blended soup until just before it starts to boil. Turn off heat. Add cream mixture and stir until smooth.
7. It's supposed to be served cold but I like mine very warm. You can garnish with fresh chives.
Edit: For those not in the US, Campbell's is a 10 and 3/4 oz. can of condensed broth. Each can is diluted with a can of water. If you use regular chicken broth you'll need about 43 oz. and then don't add the water in the recipe.
