Easy Peanut Butter Bars (Vegan, GF)

Easy Peanut Butter Bars (Vegan, GF)
prep time: 20 mins cook time: total time: 20 mins

ingredients
200g/1 cup dairy free spread (butter)
300g digestives or graham crackers (2.5 cups when crushed)
360g/1.5 cups crunchy peanut butter
2 tbsp maple syrup
300g dark chocolate

instructions

Line two square brownie pans.
Gently melt the dairy free spread in a pot or in the microwave.
Whizz up the digestives in a food processor until they are a fairly fine powder.
Add the melted spread, peanut butter and maple syrup, then whizz into a smooth cookie dough.
Divide the mixture into the two pans and press until even and smooth, pop in the fridge.
Melt the chocolate in a bain marie (a bowl over simmering water, being careful not to let the bowl touch the water or the chocolate will seize.
Pour the chocolate over the two trays of peanut butter dough and spread until smooth, then chill until set.
Cut each tray into 16 bars and serve.
Enjoy and don't eat too many!

NOTES:

Prep time does not include chill time.
