This is a punch my family has on New Year's Eve - for the last 6-8 years now. We've made it a tradition. Just made this for tomorrow, putting it in the freezer and thought I'd share. :) And it's super easy, just needs to be made about two to four hours in advance. Or in my case, if you've got a lot of cooking, the night before works just fine too.
Tropical Punch
6 ounces cherry gelatin powder.
3/4 cups of sugar.
2 cups boiling water.
46 ounces of pineapple juice.
6 cups of cold water.
2 liters of ginger ale (or any lemon-lime soda, really)
In a 4 quart freeze-proof container, dissolve gelatin and sugar in boiling water. Stir in pineapple juice and cold water. Cover and freeze until solid. About a hour before serving, pull out the frozen container and let it sit. Break it up with your preferred tool of choice (ice pick, knife, whatever - it's a great stress reliever!) and place in the bottom of punch bowl. Pour soda over it just before serving.
Makes a big size punch bowl, kay? *grins*
