This is for two. I double it.
1/2 t finely chopped gingerroot or 1/4 t ground ginger
1/2 t salt
1/4 t ground cumin
1/2 lb pork tenderloin
1 kiwiwfruit, pelled and chopped
1 slice pineapple, rind removed, cut into pieces (I cheat and buy pineapple tidbits in the can)
1 T orange marmalad
1 t finely chopped jalapeno chile (I skip that)
1. Heat grill. IN small bowl, mix gingerroot, salt and cumin and rub pork with it
2. Cover and grill pork over medium heat 15 to 20 minutes, turning occasionally until pork is just a little pink in the middle
3. In a small bowl, stir remaining ingredients until marmalade is completely mixed in
4. Cut pork into slices, serve with pinapple salsa.
I usually surve this over rice.
Per serving - 210 caolories, calories rom fat - 45.
