CARROT CAKE
2 cups flour
2 cups sugar
2 teaspoons cinnamon
2 teaspoons soda
1/2 teaspoon salt
1 & 1/2 cup cooking oil
4 eggs
3 cups shredded carrots
Mix dry ingredients with oil. Add eggs one at a time. Blend in carrots. Bake in greased and floured 9 X 13 pan at 350 degrees for 45-50 minutes. Cool in pan and frost.
CREAM CHEESE FROSTING
1/2 cup butter
2 & 1/2 teaspoons vanilla
8 ounces cream cheese
1 pound powdered sugar
Combine all ingredients and beat until creamy.
