Crispy Buffalo Potato Salad
Prep Time: 20 mins Cook Time: 45 mins Total Time: 1 hr 5 mins Servings: 8

Ingredients
4 teaspoons kosher salt, divided
3 pounds baby gold potatoes
3 tablespoons olive oil, divided
1/2 teaspoon freshly ground black pepper
1/2 teaspoon garlic powder
3/4 cup sour cream
1/2 cup mayonnaise
1 (1 ounce) packet ranch seasoning
1 bunch green onions, thinly sliced, divided
2/3 cup diced celery, divided
1/2 cup crumbled blue cheese, divided
10 slices bacon, cooked and crumbled, divided
1/4 cup Buffalo hot sauce, divided

Directions

Place potatoes in a large pot and cover with water. Add 1 tablespoon salt and bring to a boil over high heat. Reduce heat to medium-high; cook until potatoes are tender when pierced with a fork, 12 to 15 minutes; drain.
Preheat the oven to 425 degrees F (220 degrees C). Line a rimmed baking sheet with parchment or foil.
Coat the prepared baking sheet with 1 tablespoon olive oil. Add potatoes in a single layer onto the pan. Using a heavy bottomed jar or glass, smash potatoes to 1/4 to 1/2 inch thickness, taking care not to fully separate the potatoes. Drizzle smashed potatoes evenly with remaining oil; sprinkle with remaining teaspoon salt, 1/2 teaspoon pepper, and garlic powder.
Roast potatoes in the preheated oven, until very crispy and browned, 30 to 35 minutes, flipping after 25 minutes.
While potatoes are roasting, prepare the dressing. Combine sour cream, mayonnaise and ranch seasoning. Reserve 1 tablespoon green onion, celery, blue cheese and bacon for garnish; add remaining green onions, celery, blue cheese and bacon to sour cream mixture. Stir well to combine.
Add cooked potatoes to dressing bowl and drizzle with 3 tablespoons hot sauce. Toss mixture together til well coated. Transfer to a serving bowl and top with reserved green onions, celery, blue cheese, and bacon and drizzle with remaining buffalo sauce. Serve room temp or cover and refrigerate until ready to serve.

Yesterday we found patty pan squash, which I've been wanting to try. So today we made this. :D It turned out delicious.

Ingredients:

For the stir-fry:
2 patty pan squashes (about palm size)
half a sweet onion, diced
half a 1.25 pound package of boneless chicken thighs
1 tablespoon light olive oil
a pinch of sea salt

For the sauce:
1 teaspoon Santorini Citrus Seasoning
1-2 teaspoons tapioca starch
1 teaspoon Worcestershire sauce
1 tablespoon lime juice
1 tablespoon full-flavor olive oil

CURRY POTATO SALAD
Makes 6 servings

2 pounds Yukon Gold potatoes
2 cups plain yogurt
3 cloves garlic, pressed
3 tablespoons Major Grey chutney
1 1/2 teaspoons salt
1 tablespoon plus 1 teaspoon curry powder
1 cup cooked green peas
1 cup chopped onion
1/4 teaspoon cayenne pepper (optional)

Boil potatoes until they are pierced easily with tip of a sharp knife, 15 to 20 minutes. Drain and let cool until you can handle them but they are still warm. Peel and cut into 1-inch pieces.
In large bowl, stir together the yogurt, garlic, chutney, salt, curry powder, peas, onions and, if using, cayenne. Stir in potatoes. Cover and refrigerate several hours or overnight.

Bacon Potato Salad
Prep Time: 15 minutes Cook Time: 15 minutes Total Time: 30 minutes Servings: 8

Ingredients

2½ lbs Yukon Gold potatoes cut into ½-¾ inch pieces
⅔ cup mayonnaise
¼ cup dill pickle relish
¼ tsp dried dill
½ tsp kosher salt adjust to taste
½ tsp freshly ground black pepper adjust to taste
½ cup real bacon crumbles or 6 strips bacon, cooked and crumbled
6 hard-boiled eggs roughly chopped
½ small red onion chopped very small
2 tablespoons chopped fresh Italian parsley

Instructions

Place the potatoes in a large pot and cover with water. Boil over high heat until fork tender, about 10 minutes. Drain and let cool.
Combine the mayonnaise, dill relish, dill, salt, and pepper in a large mixing bowl. Stir to combine. Add the potatoes, eggs, and bacon to the bowl. Stir to mix well.
Sprinkle with red onions and parsley and stir to combine. Serve immediately or refrigerate until ready to serve.

Notes
You can use any potato you like to make this potato salad.

5-Ingredient Smoked Salmon and Potato Salad
Prep 5 mins Cook 15 mins Active 15 mins Total 20 mins Serves 4 to 6 servings

Ingredients

2 pounds fingerling or new potatoes, preferably a red or yellow waxy variety, sliced into 1/2-inch coins
Kosher salt
3/4 cup sour cream or crème fraiche
1 tablespoon juice from 1 lemon
3 ounces smoked salmon, finely chopped
1/4 cup finely chopped fresh herbs such as parsley, chives, tarragon, or scallions
Freshly ground black pepper

Directions

In a large pot, cover potatoes with water by 1 inch and season heavily with salt. Bring to a boil over high heat, reduce to a simmer, and cook until potatoes are easily pierced with a wooden skewer or the tip of a paring knife, about 15 minutes. Drain and let cool slightly.

Meanwhile, in a large bowl, combine sour cream lemon juice, chopped salmon, and herbs. Season to taste with salt and pepper.

When potatoes have cooled slightly but are still warm, add to bowl and toss to combine and coat with dressing. Serve. Salad can be kept in a sealed container in the refrigerator for up to 3 days. Serve cold or allow to come to room temperature.

Korean Potato Salad
Total Time 45 minutes (plus 1 hour for chilling) 6 servings

Ingredients

1 small red onion, finely chopped
2 Persian cucumbers, halved lengthwise, thinly sliced crosswise
1 small carrot, peeled, quartered lengthwise, thinly sliced crosswise
2 tsp. Diamond Crystal or 1 tsp. Morton kosher salt, divided, plus more
1 lb. russet potatoes (about 2 medium), peeled, cut into 8 equal pieces
2 large eggs, rinsed
1 cup fresh corn kernels (from about 1 ear; optional)
½ cup mayonnaise
2 Tbsp. unseasoned rice vinegar or distilled white vinegar
1 Tbsp. plus 1 tsp. sugar
1 tsp. yellow mustard (such as French’s)

Preparation

Step 1 - Place 1 small red onion, finely chopped, 2 Persian cucumbers, halved lengthwise, thinly sliced crosswise, 1 small carrot, peeled, quartered lengthwise, thinly sliced crosswise, and 1 tsp. Diamond Crystal or ½ tsp. Morton kosher salt in medium bowl and massage until vegetables look shiny and are just starting to release some liquid. Let sit while potatoes cook to allow vegetables to soften further and release more liquid (at least 15 minutes).
Step 2 - Place 1 lb. russet potatoes (about 2 medium), peeled, cut into eight equal pieces, in medium saucepan and pour in cold water to cover by 2". Season generously with salt and bring to a simmer over medium-high heat. Carefully lower 2 large eggs, rinsed, into pan. If using 1 cup fresh corn kernels (from about 1 ear), add to pot. Cover and cook, adjusting heat as needed to maintain a simmer, 10 minutes (exactly). Using a slotted spoon, transfer eggs to a bowl of ice water. Slide a skewer into a potato piece; there should be no resistance. If potatoes aren’t tender, continue cooking until they are, up to 5 minutes longer. Drain cooked potatoes and corn (if using) in a fine-mesh sieve; return to pot.
Step 3 - Peel eggs and add to pot with potatoes. Using a potato masher or fork, smash eggs and potatoes until broken up into small, irregular pieces (exact size doesn’t matter).
Step 4 - Drain vegetables in same sieve, squeezing fistfuls very hard to remove excess liquid. Add to potato mixture along with ½ cup mayonnaise, 2 Tbsp. unseasoned rice vinegar or distilled white vinegar, 1 Tbsp. plus 1 tsp. sugar, 1 tsp. yellow mustard (such as French’s), and 1 tsp. Diamond Crystal or ½ tsp. Morton kosher salt; mix well with a rubber spatula to combine (potatoes will break up further and become creamy). Taste and season with more salt if needed. Transfer potato salad to an airtight container, cover, and refrigerate until cold, at least 1 hour, before serving.

Do ahead: Salad can be made 2 days ahead. Keep chilled.

Lemon Meringue Pie Cocktail
Yield: 4 dessert cocktails Prep: 30 minutes Chill time (Optional): 1 hour Cook: 10 minutes Total Time: 1 hour 40 minutes

Ingredients:

1 cup lemon curd store-bought or homemade lemon curd
180 mL vodka 6 fl oz
120 mL limencello 4 fl oz
60 mL freshly squeezed lemon juice 2 fl oz
Ice optional
simple syrup optional
Swiss meringue topping (for 4 cocktails)
2 egg whites 60 mL
100 g white sugar ½ cup
¼ tsp cream of tartar
1 pinch sea salt
Garnishes
4 lemon oatmeal lace cookies or any kind of plain wafer / or biscoff cookie

Instructions:

In a large jug or blender jug, place the lemon curd, vodka, limoncello, and lemon juice.
1 cup lemon curd, 180 mL vodka, 120 mL limencello, 60 mL freshly squeezed lemon juice
Blend until combined with a blender or stick blender.
Taste and add more simple syrup or lemon juice to get the desired tangy / sweetness flavor balance.

If using immediately, add a generous amount of ice and stir to chill the cocktail.
Ice
Immediately strain the drink into 4 cocktail glasses.
Alternatively, you can cover the mixture and place it in the fridge to chill, so you can serve it later.
Swiss meringue topping
Follow my step by step recipe to make swiss meringue for more detailed tips. Since this is only for 2 egg whites, it'll be easier to make the meringue with a hand mixer. For 4 or more egg whites, use a stand mixer. It can be made with a whisk too, but this will take a while. Use a large balloon whisk to make the process easier by hand.
Make the swiss meringue just before you’re ready to serve the cocktail.
In a small pot, place some water (about 2 – 3 inches) and bring it to a simmer over medium heat.
In a clean metal bowl, place the egg whites, cream of tartar, salt, and sugar. Whisk together to mix all the ingredients.
2 egg whites, 100 g white sugar, ¼ tsp cream of tartar, 1 pinch sea salt
Place the bowl over the simmering pot of water and whisk the egg white and sugar mixture continuously until the mixture registers between 170 – 175°F with an instant read thermometer. The time will depend on the heat and the bowl size, but it usually takes me about 10 minutes for 2 egg whites.
Once the correct temperature is reached, remove the bowl from the heat and whisk with an electric hand whisk on high speed until the meringue forms stiff peaks.
Use immediately.
Assembly
Divide the chilled lemon meringue martini between 4 glasses.
Top it with a generous dollop of the swiss meringue and use a kitchen torch to caramelize the surface.
Garnish with a lemon oat lace cookie, or alternatively serve with a wafer or biscoff cookie.

Ingredients

4 slices whole-grain bread, lightly toasted
1 avocado, sliced
1 cup sliced mushrooms
1/3 cup sliced toasted almonds
1 tomato, sliced
4 slices Swiss cheese

Directions

Preheat the oven broiler.
Lay the toasted bread out on a baking sheet. Top each slice of bread with 1/4 of the avocado, mushrooms, almonds, and tomato slices. Top each with a slice of Swiss cheese.
Broil the open-face sandwiches until the cheese melts and begins to bubble, about 2 minutes. Serve the sandwiches warm.

Apricot-Glazed Chicken with Spring Vegetables

Ingredients

1 1/2 pounds skinless, boneless chicken breasts (about 4)
Kosher salt and freshly ground pepper
1 tablespoon extra-virgin olive oil
2 tablespoons unsalted butter
4 carrots, cut into 1/2-inch pieces
1 bunch asparagus (about 1 pound), ends trimmed, cut into 2-inch pieces
12 ounces snow peas, trimmed (about 2 1/2 cups)
3 tablespoons apricot preserves
4 teaspoons dijon mustard
4 scallions, chopped
1 tablespoon chopped fresh tarragon
1 teaspoon finely grated lemon zest

Directions

Cut each chicken breast into 4 or 5 large chunks; season with salt and pepper. Heat a large nonstick skillet over medium-high heat. Add the olive oil. Add the chicken and cook, turning, until browned on all sides and almost cooked through, 4 to 6 minutes. Remove to a plate.
Add 1 tablespoon butter to the skillet and reduce the heat to medium. Add the carrots and 1/2 cup water. Cover and simmer until the carrots are crisp-tender, 3 to 4 minutes. Uncover and increase the heat to medium high. Cook until the water evaporates, 1 minute.
Reduce the heat to medium and melt the remaining 1 tablespoon butter in the skillet. Add the asparagus, snow peas and 1/4 teaspoon salt. Cover and cook until the vegetables are crisp-tender, about 3 minutes. Return the chicken to the skillet along with the apricot preserves, mustard, scallions, tarragon and lemon zest. Simmer, tossing, until the preserves are melted and the chicken and vegetables are glazed; season with salt and pepper.

Summer Vegetarian Tacos with Avocado Cream
Prep time 15 mins Cook time 20 mins Total time 35 mins Serves: 6 to 8 tacos

Filling:
1 small zucchini, diced
1 small summer squash, diced
½ medium red onion, diced
1 ear sweet corn, removed from cob
1 cup cherry tomatoes, sliced in half
1 medium red pepper, diced
2 tablespoons olive oil
2 cloves garlic, minced
2 teaspoons cumin
¼ teaspoon salt

Avocado Cream:
1 ripe avocado
⅓ Cup full fat, plain Greek yogurt
¼ cup cilantro
1 tablespoons lime juice

Everything Else:
Feta or Goat Cheese
6 to 8 corn tortillas
Extra cilantro

Preheat oven to 400˚. Prepare all the veggies as described and toss with olive oil, minced garlic, salt, and cumin. Roast until tender and lightly browning, 20 to 25 minutes.
While veggies are roasting, whip together avocado, Greek yogurt, cilantro, and lime juice either by hand or in a blender.
To assemble tacos, warm up tortillas over an open flame or on a heated griddle. Assemble with roasted veggies, avocado cream, and a sprinkle of feta.

Notes
If you want a bit of protein, black beans or chickpeas would make an excellent addition to this meal!

5-6 Tbsp green curry paste (add more for spicier, more intense curry, less for milder curry // or sub store-bought)
2 cups chopped shiitake, cremini, or button mushrooms
1 large red or yellow bell pepper, sliced and halved (bite-size slices)
2 14-oz cans light coconut milk (this includes the amount you used in step 1 — you need 2 14-oz cans coconut milk total as the original recipe is written)
1 cup vegetable broth
4-5 makrut lime leaves (optional)
1 stalk lemongrass, halved (optional)

Cherry Cheesecake Dip
Prep Time 5 minutes Servings 10

Ingredients

8 ounces cream cheese softened
⅔ cup powdered sugar
1 cup plain Greek yogurt
1 teaspoon lemon juice or lime juice, fresh squeezed
½ teaspoon almond extract
7 ounces marshmallow fluff
21 ounces cherry pie filling

To Serve

graham crackers, Nilla wafers, fresh fruit, etc.

Instructions

Using a hand or stand mixer, beat the cream cheese and powdered sugar together until creamy and smooth.
8 ounces cream cheese, ⅔ cup powdered sugar
Mix in the Greek yogurt, lemon juice and almond extract until completely combined.
1 cup plain Greek yogurt, 1 teaspoon lemon juice, ½ teaspoon almond extract
On low speed, add the marshmallow fluff and mix until smooth. Increase speed to medium and beat until light and fluffy.
7 ounces marshmallow fluff
Transfer dip to a 2 quart serving dish or bowl and smooth the surface.
Gently spread the cherry pie filling on top in an even layer.
21 ounces cherry pie filling
Cover and chill until ready to serve. Serve with graham crackers, Nilla wafers or your favorite dippers.

Tabbouleh Salad
Yield: 4-6 servings

Ingredients

⅓ cup fine bulgar, uncooked
boiling water
⅓ cup extra-virgin olive oil
3 tablespoons lemon juice, freshly squeezed
1 clove garlic, grated
½ teaspoon salt
3 bunches fresh parsley (curly), finely chopped
¼ cup fresh mint, finely chopped
1 medium English cucumber, finely diced
2 roma tomatoes (firm), diced
2 green onions, finely chopped


Instructions

In a medium to large mixing bowl, add bulgur and slowly pour in boiling water. The boiling water should cover the bulgar about 1 inch. Let it soak for 20-30 mins until all the water is absorbed and the bulgur is tender.
In another mixing bowl, add olive oil, lemon juice, garlic, and salt. Mix well until smooth. Stir in cooked bulgur and set aside for another 10 minutes to infuse all the flavor.
In a large mixing bowl, combine parsley, mint, cucumber, tomato, and green onions. Add the bulgur mixture and toss well.
Serve immediately. You can chill the tabbouli salad in the fridge and serve as is or as a topping in a shawarma.

How to store: Seal the leftover tabbouleh in an airtight container in the fridge for up to 3-4 days.


Recipe Variations

Make a quinoa tabbouleh salad. Although this is not traditional, it is a nice wheat-free and gluten-free option and a great way to add some extra protein to your diet.
Add chickpeas. This is especially handy for meal prep! Rinse and drain a can of chickpeas to stir into the tabbouleh for extra plant-based protein and fiber.
Make a Mediterranean version. For a Greek or Turkish-style salad, serve your tabbouleh with feta cheese, kalamata olives, and roasted red peppers.

In a large bowl, combine all the dressing ingredients. Add salt and pepper to taste (I add 1/4 teaspoon each). Whisk until smooth.
Add all chicken salad ingredients to the bowl with the dressing. Gently stir until everything is well coated. Taste and adjust seasonings as needed.
Choose your favorite way to serve this chicken salad (see note).

On a croissant with a few pieces of lettuce.

On a thick sliced cucumber with microgreens
On toasted bread
In lettuce wraps with butter or Romaine lettuce
Spooned into halved avocados

Spinach, Mushroom and Cottage Cheese Crêpes

INGREDIENTS

Filling
1 cup cottage cheese
2 cups fresh spinach leaves
1 package sliced crimini mushrooms (8 oz)
1 tsp nutmeg
1/4 tsp salt
1/4 tsp pepper

Crêpes
1/2 stick unsalted butter
2 cups flour
21 oz milk
4 eggs
1/8 tsp salt

INSTRUCTIONS

Add the mushrooms to simmering basket of Thermomix® and fill the mixing bowl with 2 oz water. Steam on varoma setting for 4 minutes, then transfer to the mixing bowl after emptying the water and sauté on varoma setting for 4 minutes.
Add the spinach and cook for 2 minutes on varoma setting.
Add the cottage cheese and transfer to a mixing bowl.
Add the crepe ingredients and mix on speed 4 for 30 seconds. Let batter rest for 20 minutes.
Heat a cast iron skillet on medium heat and grease with butter.
Pour about 1/3 cup batter in the middle and swirl around the pan until set.
Cook for 1 minute, until bubbles form in the middle, then turn over carefully with a heat resistant spatula.
Top with spinach, mushroom, cheese filling and fold over twice.
Serve hot.
